Hearty Wholefood Salad

This is one of Jenny’s┬ámost used salads. It contains whatever is healthy, fresh, local and best. Ideal to serve on its own with crusty bread or accompany many of your favourite dishes.



1 packet of rocket leaves

1 packet of assorted herb lettuce

200g/8 oz of strawberries (halved)

100g/4oz of pomegranate seeds

100g/4oz of blueberries

10-12 stems of fresh baby asparagus

1 packet of mange tout peas (approx 100g)

100g/4oz seasonal fresh beans

50g/2oz of assorted seeds

50g/2oz of feta cheese

Dressing (no fat)

125 mls, balsamic vinegar

1 dessert spoon of honey



  1. Make the dressing, by boiling the balsamic vinegar for 1 minute, then add the honey and cool.
  2. To assemble the salad: Lightly blanche in boiling water for 2 minutes. The asparagus, fresh beans and mange tout. Cool and refresh. Assemble the salad on a plate or bowl, making the salad robust and chopping all ingredients coarsely.
  3. Pour over the chilled dressing and serve.
